Anyone try baking an avacado?

I had a friend suggest this to me and I've never tried it. Not sure if I'd like the texture. What are some suggestions? I'm thinking about a simple egg in the center of each half.

Tried this and didn't care for it. Looks pretty on an Instagram page but the avocado turned out stringy and tough. Much better to just slice up a good, ripe avocado and put it on top of an already fried egg.

We breaded and baked avocado slices (about the size of thick french fries) one time. They were good but honestly just too damned rich to eat like that. I could see if you served it on top of beans or a salad or something though.

And for the record I love avocados. They are amazing.

Thanks. I'm actually thinking about a sous vide (water bath) egg yolk in the center of a raw avocado since I'm leery of the texture.

One egg per half of avocado is too much avocado to me.....I use about 1/4 avo per two eggs. Put the sliced avo into a ramekin and break the eggs over it. Bake at 350 until there egg is as set as you'd like.

I got turned onto grilling avocado and topping it with some sauteed shallots and bacon with a touch of red wine. I highly recommend it. Hat tip to Cafe Henri on this idea.

For like six months there was a mexican restaurant at the north gates of LSU that had baked avocado dish called "tortugas" it was really good. Was shrimp or chicken with rice baked in an avocado with cheese on top.

El Gato Negro has a stuffed avocado dish with shrimp and topped with cheese.

I make this recipe at least once a week. It's become a favorite in our house. It tastes great, it's healthy, and takes no time to prep. I have no idea how it could make the avocado tough or stringy, if anything, it just makes the avocado softer. Best to use a large egg, as opposed to an extra large egg, and you won't be able to fit much of the egg white in the cavity. I cook the egg white separately with some extra salmon, and make a small egg white omelette as a side.

There used to be a place called sangria in Dallas that did a crab stuffed, fried avocado that is absolutely delicious.

Wow. Gorgeous! Good to know that it tastes good, too.

I've baked some avocado fries a couple of times. Very mild tasting, but good.

One of the local craft beer places in Clear Lake makes a bacon/avocado grilled cheese. That thing rocks.

Also another place near Kemah that makes avocado fritters.
