Another gumbo thread...your favorite meat

i know there are the normal duck, sausage, chicken & hen but what other kind of meat have you put into your gumbo that have turned out exceptional?

Always specklebelly. Which is why I have no idea about chicken

I tend to agree. Specks with some good sausage and some oysters. Delicious.

jimbeam - you had any luck with Snow goose breast in gumbo? Got some breast filets in my freezer I been scared to cook

Always a fresh snow. Actually gumbo is the best way to cook a snow. It's the bone that tastes bad. So debone it (it's no Specklebelly but a snow goose's taste ceiling is only so high )

But snow breast mixed with Specklebelly in a gravy is also

My favorite is seafood. In the meat dept, I like fried chicken and smoked turkey or roasted turkey.

Chicken and sausage all the way.

Other meats are delicious, but there is only one king and queen.

I ain't gonna lie... my momma's turkey neck and aundouille gumbo was legendary.

There's a lot of meat on a turkey neck.

I agree, I always put turkey necks in my gumbo and a little smoke turkey necks also
