A Mignonette Sauce Recipe For Oysters

Good stuff as a change from a cocktail sauce , hot sauce, or nekkid:

1/2 cup white vinegar
1/2 cup unseasoned rice vinegar
1/3 to 1/2 cup finely minced shallot
Several grinds of fresh pepper


Mix it and refrigerate for at least a few hours...it's best after 2 days. Just a dab on an oyster is really nice

I make it like that but I prefer champagne vinegar to the white. A bit less bite. And I much prefer it to cocktail sauce because it is very fresh. And why we don't see it around here is beyond me.

Peche puts out the best I've tasted. After a two day sit, this was legit, though.

I made a similar one with homegrown citrus when my kumquat and orange trees were producing. Also added some finely diced jalapeños. +1 on the Champagne vinegar.

Had this with some PEI oysters up in Saint John, New Brunswick and was an immediate convert. So good with the extra salty NE oysters. I believe they used red wine vinegar.

Im with the rest. White vinegar isn't my standard go to for that. Can be a bit overwhelming. Red wine vinegar works fine, white balsamic can be good with a torch of fresh citrus added. Tends to be on the sweeter side though.

Most recipes have the champagne or red wine vinegars...this was the first I'd seen with the rice vinegar. That's the driving flavor, not so much the white. My mod was black pepper over white.

I know the Pappa's family of restuarants is rarely the barometer for great food, but their mignonette sauce has soy sauce in it, and is my preferred mignonette.

It's ironic you mentioned that, because my reply to a recipe would have been to go to Peche, order Island Creek or your choice of oysters, and enjoy with their sauce.

Frankly, I'm a purist and no Peche Mignonette has ever touched any of the oysters I've had there, although I have tasted the sauce separately and it's right on.

Dude, in a city of over 200,000, you have to have an Asian mart somewhere, or at least a grocer with an Asian aisle.

I made this variant mignonette when I did an oyster roast last month. It was on Eric Ripert's website. It got inhaled along with the more conventional shallot/champagne vinegar mignonette that I made. It also uses rice wine vinegar, mirin, cilantro, and minced jalapeno.

It's pretty common. I'm surprised you're having difficulty. I would expect most large grocery stores carry it an even Wally World. Are you looking in the Asian section, also?

Checked the normal vinegar section and Asian sections. Nada.

ftr, i dont know you or your past, or where you work, but i got about 3 texts and a couple of emails the other day saying that you were probably this boards best cook. also, added some to that, as you might guess.. but, thats what they said.. just my opinion that youre respected as a chef, and we also wondered why would you want to tear a young guy down that posted a dish that he cooked and was proud of it? You dont have to..

im done posting to you about that night, good or bad, what you do is up to you..
