I've been a Lotus loyalist for over 20 years, usually Lotus or a Capriotti's 'Bobbie' are the first thing after checking in the luggage..if not straight from McCarran in a rented car.
And despite GQ articles by Alan Richman, NY Times calling it the best in North America,etc..the gap in town has been closed a bit, as Pin Kaow and Archi's both do some great dishes.
Saipin Chutima's greatest strength is the Northern Menu. I've brought people to Lotus before that when just ordering off the main menu, or ordering southern Chinese fare there, were underwhelmed vs the hype. And that tacky strip mall has aesthetically always scared first-timers, though the interior of Lotus has been upgraded greatly through the decades..

Correction to earlier post, not Carnivore, but Carnevino.
The reason I'd pay uppiity stripprices here is that you can get a steak aged as much as 240 days if you call it in prior to arriving, and usually prepay for it.

I lived in Vegas for a couple of years after Katrina. I second the Thai food at Archi's as well as Capriotti's. The Bobbie is very good, but I was always partial to the cheesesteak.
As for steak, the best steak I had while living there was at Nine Steakhouse in the Palms. Pretty pricey, but worth it in my opinion. The ambiance is pretty noisy though. Lots of metal walls so the all the conversations were just bouncing everywhere.

I prefer the taste over ambiance. I had quite a few steaks while living out there...all were good, but not worth "Strip" prices. Nine is very pricey, but it was the only steakhouse out there that made me go back for more...just a personal preference. Things may have changed...I left Vegas 6 years ago.

Steak - CUT, Carnevino, Craftsteak, Stripsteak, or Prime. Steakhouse in Circus Circus is awesome for the price and less pretentious crowd. In Venetian, skip Delmonico and go to CUT or Carnevino.
Hamburgers - Holsteins or Gordon Ramsay
Public House for beer...the food is damn good as well.
Parasol Down in the Wynn for cocktails on the lake of mystery(or whatever they call it). Olives at Bellagio to watch the fountains. Paris has a good spot for watching the Fountains too, but I've never been. Chandelier Bar in Cosmo is another cool spot for drinks.

Just went there for 4 days and got back this past Monday. We went and ate at Del Frisco's Double Eagle Steakhouse and the food was excellent and service was even better. One of the best steaks I've ever eaten.
Get ready to walk your arse off unless you don't mind blowing money on taxi rides. The Venetian is on the northern side of the strip.

One of my favorite places (and one of the few remaining with old-school Vegas prices) is Ellis Island Casino. Great steaks, BBQ, and breakfast at ultra-cheap prices.

Go to Yardbird hungover and get a mint julep and the chicken, waffles and watermelon. Then slide over to Public House next door for beers and some apps.
