I LOVE that place but it's far from a hidden gem. I've gone there at 3:30AM during the week and found a dozen people in line. (If you've never been, The Palace Station Oyster Bar only has about 12 seats and everything is cooked to order, meaning it's going to take time.)
They are very good...a bit pricy but you do get a lot for the $$$.

It's a hidden gem in regards that the only people that know about it are locals and your Vegas regulars from California and Arizona. Thank god they are open 24/7 now. The best time to go is for breakfast before 10am. Anytime after that u will be waiting in a long line.
Someone that flies across the country and has only visited Vegas once or twice in their lives isn't leaving the strip to go to palace station, the only tourists you ever see there are Asian.

Hot and Juice crawfish - different variation than Louisiana style.
The Goodrich - small mobile van place north of strip. Whatever sandwich you get, get it monte Christo style(the buns are French toasted)
ping pong pang - in Gold Coast. Authentic and they have dim sum.
Hobak - korean BBQ. The Korean woman will cook and cut the meat in front of you like a good submissive Asian wife.

I've never been to the one in Vegas, but they have a Los Angeles location and it's by far the best of any of the many seafood boil places around here.
