In the northeast there is always a debate between calling it red sauce or red gravy,

Being from south Louisiana & spending a lot of time at camps, I have to say I have NEVER heard of putting olives in gravies. In fact, if someone at the camp put olives in the gravy, we'd probably figure he was drunk. I've had them in spegg sauce but never a "rice & gravy". This may be the new "tomatoes in gumbo war".
This I agree with. The only time I've seen someone put olives in any type of gravy whether it be red or brown was in Baton Rouge at a friend of mines mothers’ house. Worst spaghetti I ever ate and I love olives. I also had a good Italian friend of mine growing up and even his mom didn't put olives in a gravy. I see more mushrooms in gravies than olives.

Guys I work with from the Laplace area, put olives in their red gravies. I saw an old Justin Wilson show the other day and he threw a whole jar into a sauce piquant.

I sometimes add olives to a vodka gravy.

Olives go nicely in a sauce piquant.

Olives in gravy? Oh, they mean red sauce or "red gravy." Not gravy.

Me too, I throw in a splash of V8 and tabasco if its an early morning gravy. Poops, it's mostly sauce piquants, but one of the girls puts them in her spagetti sauce.

depends on which kind of gravy I'm making. if I'm cooking biscuits with breakfast sausage and white gravy of course I'm not going to use any fricking olives.

One of my heroes. Loved him. Met him once at MTV Mississippi - he was a character "I'm gone tell you." Could you imagine going to a safety lecture by him when he did oil field safety training? He told a story about Beaudreaux and Tibedeaux once where they went duck hunting. Tib shot a duck and his dog jumped out of the boat and ran across the top of the water, retrieved the duck and ran back across the top of the water and jumped into the boat. Tib just stared silently at the bottom of the boat as the dog did his job. Beaud was speechless as Tib shot another duck and the dog did the same thing. Tib again stared at the bottom of the baot and said nothing. When the dog got back, Beaud said, "I have never seen anything like that in my life." Tib shook his head and said, "I know. I have never been able to teach that dog how to swim."

The you haven't been to enough. I've been to a couple camps that had olives in a red gravy and sauce piquante. Cocodrie fishing camp and a duck camp off the intercostal.

Red Gravy= a gravy that has reddish-brown tint to it because you browned a small amount of tomato paste/sauce in it to give it a little color ie. Sausage or tasso in a red gravy.
You'll also throw in a piece of browned pork as well, making the term, gravy, technically correct. My sicilian grandmother would sometimes use pork feet, which she called "pedi de porca". Good good stuff.
