Try whole green olives. Nothing better especially in a spaghetti sauce/red gravy

I used finely diced black olives in my lasagna.

"it's a south, la camp thing"

Being from south Louisiana & spending a lot of time at camps, I have to say I have NEVER heard of putting olives in gravies. In fact, if someone at the camp put olives in the gravy, we'd probably figure he was drunk. I've had them in spegg sauce but never a "rice & gravy". This may be the new "tomatoes in gumbo war".

My favorite pizza is a pepperoni and green olive pizza. The saltiness of the green olives, which is an alternative to anchovies, combines well with the tomatoes in the pizza sauce and spices of the pepperoni. Unfortunately, I have to make them myself as pizzarias tend to have black olives only.

I sure hope by gravy you mean red sauce, because gravy to me is something you serve with rice and would not have olives in it. Spaghetti sauce or red gravy, sure.

Why do people refer to a red sauce as "gravy"?

It's a country thing and actually I think it may be more a north/central LA thing. My wife's grandma is from Winnsboro and called it "red gravy" even though she was 100% Italian.

In the northeast, I'm pretty sure Italian Americans refer to red sauce as gravy. Ask Tony Soprano.

I just always think it sounds a little strange.

@Darla Hood
I'd be "skeered" to ask Tony Soprano anything.

Red sauce= Italian
Red Gravy= a gravy that has reddish-brown tint to it because you browned a small amount of tomato paste/sauce in it to give it a little color ie. Sausage or tasso in a red gravy.
