Cooking squirrel

So my son goes hunting this morning and comes back with a dozen squirrel. I want to make something for him that won't taste to squirrely. He's 12 and hasn't eat a lot of squirrel. I don't want him to get a bad taste for them. Do you guys have any recipes for cooking squirrel?

Congratulate him on killing 1.5 the legal limit.

I have never enjoyed eating squirrel.

Maybe Madamsquirrel will be along with some pointers.

I've used it as a direct substitute for chicken in just about anything. Last time I made squirrel-pot-pie just boiling and shredding the meat. Squirrel dumplings is also really good.


Reserve the stock when you boil the squirrel and use as a stock or as a soup base.

Sounds good.

Remember to marinate the rodent. It reduces the gamey rodent flavor and tenderizes the meat.

What do you marinate it with to lessen the gamey flavor? The pot pie sounds really good.

Cat or fox (red or gray)? Cats are smaller and good for frying. Remove the front and back legs and the backbone area. Dredge in seasoned flour and fry. Or better yet do the above and cook them down in a gravy. Especially if you dealing with fox squirrels.

Soak em in some milk or butter milk. Their not bad gamey to meat though. Especially if you cook em down.

When I was a kid my Grandmother used to make a squirrel gumbo that was great. Also remember finding shotgun pellets in it sometimes too.

I was thinking of cooking it down in gravy with onion and bellpepper but wanted some other ideas also. Thanks

Soak over night in salt water. Fry them after par boiling at a simmer for 45 minutes. Make a gravy with the stock.

Used to eat a lot of squirrel and dumplings when I was a kid.

Fried squirrel ain't bad either.

Soak in salt water if boiling for dumplings or stew. Soak in buttermilk for frying. Use the buttermilk to make gravy to simmer the fried squirell quarters in. Tree rat is GOOD

We soak n buttermilk..... Flash fry them (not ribcages), and put them in cast iron pot with sauteed onion/peppers.... Top with water and Tony Chachere's Dry Roux Mix...... Cover and bake in oven at 275 for about 2.5-3 hours.

Camp recipie. Lazy. But delicious. Dont bang the tonys dry roux mix till u try it with fried squirrels

Serve over rice with biscuits

Brown em in a dutch oven, cook down some onions with em, put some water in there, cover the pot, and let it bloop bloop for a couple hours. Season to taste, cook some rice.

I'd love to say I had a fancy recipe for squirrel-pot-pie, but I literally just followed the recipe on the side of the Campbell's Cream of Potato Soup can just substituting boiled squirrel for boiled chicken breast. Add some sage and thyme to taste.

When i was a kid my brother and i hunted with my uncle. He would skin the squirrels and some how leave the skull on. My grandmother would cook the squirrels down in gravy. My uncle would take the back of a butter knife, crack the skull and eat the brains. It was sick. I'm fifty years old and still remember that like it was yesterday.

Eating the brains of an animal may make you sqeamish, but it is not abnormal in the world in fact, ans that includes America with certain regional/ethnic dishes.

This, Squirrel are not gamey at all IMO. Kinda tough and need to cook down for a while till tender.
