The bayou behind my house is feed from Bartholomew. I could scoop it up from behind the house and not worry about getting hit on 165. :nana:
Those corn bread waffles do look good. I will have to try that.

They were cooked until soft all the way thru but not mushy. I do not like them mushy.

1/2 Red Bell Pepper
1/2 Green Bell Pepper
1 medium onion
2 stalks celery
2 Tablespoons Garlic

1 pound smoked sausage
2 pounds red beans
1 pound Rice
Oil

Spice mix
1 1/2 Tablespoons Salt
3/4 Tablespoon Cayenne Pepper
1/2 Tablespoon Black Pepper
1/2 Tablespoon Thyme
1/2 Tablespoon Oregano
2 or 3 bay leaves
