For potato salad, I like the simplier the better. Potatoes, Kraft Mayo, eggs, onions, must and seasoning. Coleslaw actually mix vinegar with mayo and sugar.
When got some last weekend in Opelousas. I think that seafood place on Perkins Heads & Tails?? sales it.
Best meat is a combination. We always use pork, sausage, and either deer, beef or turtle. Brown your meat, then add 1 chopped onion and minced garlic add water to make a gravy throw in drained rotel, tomato sauce and let simmer until meat is tender. Top off with fresh mushrooms and green onions! Burgandy like in that other recipe never have seen anyone cook with that and I have eaten sauce picante forever.
You could probably get it over nighted.

Tryout that place in Watson, they have chicken stuffed with spinach mix and potatoes to die far. Everything is done except the grilling.
Okra is only good if it is done right. Have to fry it down so it isn't slimy!
Beans are always good - black eye, etc.

Brown GB and Pmeat if you have it. Add in beans, brown sugar, apple jelly and bbq sauce! you can also do brown sugar, ketchup and must.
Everything there gets me sick, including their unsweet tea.

Chuck roast is your best bet. You can cut the fat before grounding. Ribeyes not as good, because ribeyes have tooo much marbleing that's whay they are so tender.
Most mom & pops beat the fast food chains hands down and usually the same price. If you have to settle for something Backyard burger w/ pepperjack would be the best.

Late to reply but we always go to a place in Watson, they are transplants as well and make the real stuff. They have a website, I called for you it is padains.com
Try out that place in Watson, they are pretty good - great sausage as well. Went to a wedding they catered and the food rocked!
Dining area may be good but watch out for the kitchen!
