I college I tried cooking duck a few times so I would go to Matherns and buy the whole duck and clean it myself. It's a lot cheaper than Whole Foods and gives you more parts to use.

Can anyone suggest a restaurant supply wholesale store in BR?
I worked in bars and restaurants all through college so luckily I picked up some cooking tips there. When I need a quick answer I'll look up stuff on YouTube. That's where I learned how to properly clean a beef tenderloin. Just a suggestion.
The one thing that I can't do is sharpen a knife properly. Any tips or direction on where to look to learn how?

My grandfather graduated Tulane in '39 and always watched Tulane football. I remember the year after he passed away LSU crushed Tulane and my grandmother commented,"I don't even know why they still play football, they aren't good anymore." :lol: Thought that was funny from a 90 year old woman.

Friend of mine works for Coors and told me Mugshots had to have a Haz-Mat company come in and clean the place before they could start. Champs literally left EVERYTHING. Beer just sat in the tap lines and they got all moldy, food that was prepped for the next day, stuff that has no business siting in a fridge for months. Im glad to hear its doing better. I will try and get over there for a beer soon.

Have had mine for almost two years now. Bought the charcoal chimney starter, an electronic thermometer, and a cover. Still haven't used it :banghead: :banghead:. Maybe this winter I'll bust it out. Found some tips online on how other people have rigged their smokers up for better ventilation and such.
What about in Baton Rouge? Don't have time to go to LaPlace and I need some for Besh's crawfish cornbread dressing I got from NOLA.com.

Don't worry about the dress code. I used to work there and unless things have changed jeans a polo wil be fine. There were times when country arse hicks would role in with jean shorts and a mullet. Agree that they should make guys take off their hats too.

I treat them like regular fries. Throw some Tony's on them and did them in either miustard or BBq suace. Wife thinks I'm crazy but she likes plain food and calls that tastey.

Just started eating sweet potato fries so now I'm moving onto the real deal. I've fixed them for my wife before but it's been a while. Figured I would just bake them like normal but besides butter and cinnamon does anyone have any suggestions?
