I've cook in a few crawfish competition seem like every-time whoever bring the most win people's choice. Most don't have a judge panel and seem very unfair to me. The winner's crawfish can't even peel right.

Which cookoff is legit with real judges in Baton Rouge?

Don't buy it probably peelers. I hate when they sell them small like that.
Go Cajunland and don't look back. They have less salt and it's just spicy enough. use 40 qt of water (2 5-gallons) per 4lb complete boil.

If Alive you need to know how to kill them humanly, and take the shell off cut in half the body. The meat is firmer and last longer than blue crabs. I would boil and soak them with LA seasoning. let them soak 15 mins.
Add some lemon pepper/butter/parsley mix on outside or dust them if people like that.

I agree. Don't get anything over 100K. All you do is fix this and that.
Better to look for a reliable less maintenance cost car/truck around 50-80K.

Try Country Corner. They just the right spiciness and juiciness. Best to come when the fresh batch just came out.

I second this. adding it after fire off make a difference also it adds some flavor into the boil. I boil and use lemon juice with Cajun Land. It's the best.

I usually go to Westwego seafoood in NOLA or houma for big sacks cheaper.
when they realize the qb doesn't fit their offensive scheme.

Great effort though. The best are made by doing stuff people don't normally do. How did it taste compare to Pho place?
