I throw some bacon grease in the pot at medium heat and start frying it down. Let it stick then stir. Also add some water & scrape the side as needed. This usually take around 1 to 1.5 hrs.
Doing a 10 gallon recipe--around 28lbs of meat. Guess I'm browning the pork too long.
Alumni Jambalaya Cookoff Time Issue

Decided to sign up for an alumni jambalaya cookoff but noticed we are only getting 3 hrs to make it happen. Never really timed it but at the house I think i'm in the 4-4.5 hr range. Any good tips to make that time up?? I'm guessing crank the heat?
