I've taken numerous trips to Vegas alone.

Vegas is a great base for a solo road trip. Usually cheap flights and car rentals.

One trip I really liked was to fly into Vegas, bought a tent and a few supplies at Walmart, and then camped in Death Valley the first night (Scotties Castle is worth a visit there). This was in the fall so not too hot. Then on to a campground at the base of Mt. Whitney. Very scenic area, they've filmed over 100 westerns in the Alabama hills below Mt. Whitney. Then up the Owens Valley (lots of campgrounds possible) to Mammoth Lakes/Devil's Postpile, then Mono Lake, then over Tioga Pass into Yosemite. That's why this is a great fall trip, Tioga is still open, the tourists aren't so thick in Yosemite, and Death Valley isn't too hot to camp.

There are a lot of possible road trips like this. Utah is great (and Zion isn't far from Vegas but is crowded year round now). Utah has plenty of great places that aren't crowded - Capitol Reef in particular.

A few people have mentioned hiking. That would be my first option. Fly out west somewhere. Moab, Utah would be my first idea. Go hike the trails I want to do that were too long for the people I was with when I went.

My second option would be to go to Kentucky and hit the Bourbon Trail. Tour some distilleries and drink.
