Evergreen museum would be a good one. North from Eugene.

This. If you are flying out of Portland and have to drive back from Eugene, you can cut over to the coast at Florence and drive all the way up the coast to Astoria - gorgeous drive, and then cut east to Portland from Tillamook, Cannon Beach, or Astoria. Recommended stops on the way:
Pelican Brewery in Pacific City, even if you don't drink beer. Restaurant is good, but the view will stick with you forever.
Cannon Beach and Ecola State Park. Cool town, but go to Ecola State Park for a view you'll never forget.
Astoria is at the mouth of the Columbia River. Beautiful views and I recommend Fort George Brewing for dinner and a beer.
There are also some great small towns on the way that are worth stopping at to snap photos.
One place nobody has mentioned in Portland is Multnomah Whiskey Library. It's a private club, but you can buy a one-time "Hall Pass" for $25 (do this in advance). It's a splurge, for sure, but the atmosphere, food, and drinks are top notch. It has a 1920's Speakeasy type feel. Very luxurious.

Home of the "Spruce Goose", which was the largest plane in the world for a long time. It was co-designed by Howard Hughes and Glenn Odekirk, who I am related to. Unfortunately, my family tree has Odekirk in it, and not Hughes...
