I’ll be here for work for a week with a whole bunch of free time.
What are some good things to see and do? Food? Sites? Nightlife?

Have some friends up there and understand it's pretty friggin cold right now, so stay warm, first and foremost.
As for eats, lots of great places there. I've always been a fan of Kramarczuk's. It's a Ukrainian place and they have tons of great stuff there. May be the best brat I've ever eaten.
112 Eatery and Bar La Grassa are owned by the same outfit and they're both great. Lola for pizza.

I go up there a couple of times of year (normally, not this year). It's freakin' cold right now!
But..
I love Minneapolis. When I have time, I like to:
Visit Mall of America. Amazing place.
Walk around Lake Calhoun.
Just along the Mill City District near east downtown Minneapolis lies this man-made waterfall, Saint Anthony Falls.
LINK
They have some other great parks like Minnehaha Regional Park.
Waterfalls!
Tons of restaurants. Just visit Yelp or other review sites. Check out St. Paul as well.
I've liked going to The Oceanaire downtown.
The Uptown Minneapolis area also has a ton of restaurants and bars.

North Loop, Uptown and Northeast are the three neighborhoods to be for bars/restaurants. If you want to relive college, head across the river to Dinkytown I think bars/restaurants can seat up to 50% indoor capacity right now.
Have plenty of friends that live in Minneapolis. Cold as hell right now — buddy sent me a picture of himself grilling and the windchill is -17.
I still maintain Minneapolis is the most underrated city between April - September.

I have no suggestions, but I can say whatever you do will be inside.

There used to be a really great Target, don’t know if it’s still there.

Target is HQ'd in MPLS. Guessing you may be thinking of the store in Nicollet Mall. It is one of the better ones I've been in, though I wouldn't go out of my way to visit

Tag is for all of the advice.
I am staying in Lakeville. Last night we did Northern Taphouse. It was nothing special.
I’m hearing Alibi and Lakeville brewing company as good spots.
I think that it is too cold for folks to be out.

Lots of churches and Mall of America. All were amazing.
Mall Of America - this blue thing was about 3 stories tall...pure Legos.
We went in the fall of 2019 and they were a ton of outdoor restaurants with flowers and plants ... had an Austin vibe. I am going to go out on a limb and say that things have changed since I was there

Lake Harriet is great for walking. My favorite of the chain of lakes.
Northeast and north loop have cool breweries. I am huge fan of Modist (North loop) and Indeed (NE).
Minnehaha falls park is always good. I also love the stone arch bridge. Boom island park is on other side of the river and has great views.

Summer humidity can get up there and mosquitos blow but spring and fall are absolutely gorgeous
