recommenations for cruise shore excursions in Puerto Vallarta, Mazatlán, and Cabo San Lucas

Can’t help you on excursion recs, but the Mexican Riviera is on the other side of Mexico from your desired ports.

I went to all three of those ports on my honeymoon cruise but that was a long long time ago. We took some excursions but most of them included a lot of time on the beach.
But yes, those Pacific Coast ports were called the Mexican Riviera.
