I have left off Galway on this front end itinerary because there is a good chance that we will go to Galway on the back end of the trip (Business part) when we will also do Dublin. We may end up doing the Cliffs of Moher- we will need to see things work out.

My updated "penciled- in" itinerary is

Day 1 Trim (just to get out of Dublin to get a nights rest)
Day 2 Dunfanaghy, Co. Donegal
Day 3 Dunfanaghy
Day 4 Donegal Town
Day 5 Westport
Day 6 Westport
Day 7 Quin (just need a place half way between Westport and Dingle)
Day8 Dingle
Day9 Dingle
Day10 Dingle
Day 11 Either somewhere in Cork or Kilkenny area...?

Day 12-16 Business part of the trip (Dublin and likely back out west to Galway)

You should consider Galway. It's not that big of a city and offers a variety of things to do in city and surroundings. It's a university and research center giving it an enjoyable populace. Book a visit to any of the local oyster farms. Tasting is usually included.

Rather than dealing with busloads of tourists at cliffs, book a private tour with Cormac. LINK

Thanks Tree- Almost positive we will hit Galway on the back end of our trip, so I left it off the front part. I had looked into the oyster farm tours but the 2 that I found looked booked up already for late May... hopefully something opens up. Also considering mussel farming or seaweed harvest tours.
