I just booked Spain for 3 weeks next May

We fly into Madrid on the 6th and fly from Madrid back to the US on the 27th. We're very excited as this will be our first real trip since COVID hit.
Right now I haven't even planned an itinerary. This is a trip that we had planned in May of 2020 that got bushwhacked by COVID. I think it will be Madrid-Barcelona-Valencia-Mallorca-Seville-Madrid. It's 20 full days in Spain so we should be able to spend a little time to get to know a few places.
I booked on Iberia from Miami direct to Madrid. 170k Avios for business class both ways. Amex MR points transferred at 1000 MT to 1400 Avios.
Now it's time to start plotting where to stay in each city and how long we'll stay at each location. I love the planning part and this is something I've been looking forward to for a year and a half to plan again.

I absolutely loved Barcelona and Seville. Andalucia as a whole was really nice. Didn't love Madrid to be honest but the art galleries and food there is great.
My friends love San Sebastian and Bilbao, which I realize is sort of the opposite direction but San Sebastian looks amazing to me and next time I am in Spain I will do that
I understand that pull of Mallorca (and I have another friend that lives in Europe that just spent 3 weeks just there and loved it), you may consider since its an island skipping and just staying on main land.
You could have a really nice trip soaking in some great spots doing:
Madrid-->San Sebastian-->Barcelona-->Valencia-->Sevilla/Andalucia-->Madrid
On second thought:
Its probably a lot easier to go by boat/plane from Barcelona to Mallorca to Valencia.

No worries. I think we will either rent a car or train from Barcelona to Valencia. Previously the rest was all flights as we used Avios and the flights cost very few points.
We like Madrid for a day at most at each end. I love the Mercado San Miguel there. What a great place for tapas and lunch.
Basically Madrid is a night to decompress and to stay at before our flight home.
