Honeymoon Ideas Dec/Jan

My fiancee and I had booked a trip to St. Lucia for 11 days at the beginning of January 2021. We are set to stay in Marigot Bay for the first half of the trip and Sugar Beach for the second half. St. Lucia has some very restrictive guidelines...not letting people leave their resorts except on "hotel sponsored excursions", covid test requiring results from a test administered within 7 days before arrival (to be expected), no taxi services, etc. A primary reason for wanting to visit the island was to do some exploring, and now it seems like we probably can't do that. Many restaurants seem to be closed and there's no guarantee they'll be open in the coming months. There are prettier beaches (although Sugar Beach's scenery does look amazing), and we're considering a change in plans.
Can y'all throw out some honeymoon ideas that might minimize covid effects? Open to traveling abroad, but domestic might be more preferred. We ski a ton, so not sure that it would be something that we'd want to base a honeymoon around. Although we haven't skied outside of Colorado, so something like Montana could be an option.
