Find one of those glamping places - air conditioned luxury tents
https://www.undercanvas.com/ in the Smoky Mountains
https://geronimocreekretreat.com/ in the New Braunfels area has air conditioned teepees and treehouses

I recommend going to the Smoky Mountains. The key is staying in Wears Valley and spending your time in SMNP instead of the tourist traps of Gatlinburg or Pigeon Forge.
Second this.
We went a couple years ago. Got a great cabin in Wears Valley and explored the last touristy areas. We did spend a day in gatlinburg and an evening in Pigeon Forge. I don't intend to go back, but Gatlinburg is better than Pigeon Forge (not that either are great).
If you stay in Wears Valley, make sure you go to Granmother's Kitchen for a great breakfast, and go to Pawpaw's Catfish Kitchen for dinner one night. Pawpaw's is owned by a couple Cajuns and they make legitimately good Cajun food with ingredients they drive in from Louisiana.
