The Hyatt in Cancun for adults is supposed to be really nice.
Grand Fiesta Americana is supposed to be really nice.
We went to Finest Playa Mujeres and loved it this past summer. The adult side is Excellence.

Food and drinks are meh. But I am told that's on par with most all inclusives.
But the resort itself was stunning and we had a blast.

Excellence PM’s food and drink is much better than most AIs. If you don’t like that, you’d absolutely hate Sandals and similar places.

Just got back from 3 nights at Secrets Maroma with the wife and definitely recommend it.
Great hotel layout and top notch staff. The food was surprisingly good, but I would skip the French and Italian restaurants. Mexican was great and the two places by the pool were good. In-room dining was your usual room service.
My only complaint about Secrets was they tried to push us during check-in to sit through their timeshare/vacation club sales pitch. After traveling, I just wanted to get my room keys and go relax at the pool.
We also added a beach cabana one day. That was the only additional charge at about $180 for the day. It came with a nice bottle of champagne, 15-minute massage for each of us, a waiter to get us any food/drink, and a concierge to make sure we were happy. It was a great experience.
Last rec is to check out Kalido Travel for car service to/from the airport. They’re super easy, thorough, and nice cars.
