What has my iPhone done to my notes?

I go to check some notes I’ve recently made and I find that the notes are now organized into folders. Also more recent notes I’ve made are now gone. Google hasn’t helped. I have not intentionally performed an update. I’m baffled. Any suggestions? Tia.
