Under Cabinet LED lighting?

So we are in the process of a kitchen remodel, and I've been tasked with figuring out the under cabinet task lighting. In our current kitchen, I'm running WLED on a ESP 8266 nodeMCU with a 60 led/m RGBW strip in aluminum channels. I ran it that way because it was relatively cheap, and it was a retro -fit.

I'd like to stay the low voltage route, but the contractor/electrician says they can put 3 way switch in at each end of the countertop to power them. I'd like for them to be smart, and have the ability to dim them if needed. I also plan to run a strip of LEDs under the cabinet kick plate for ambience. Truth be told, I'll have to do this project twice, as we're building a basement kitchenette first, and then we're going to dive deep into the kitchen.

Any ideas that might fit the above requirements? Thanks in advance.

Edited to add: Most of our smart lights run on the Tuya ecosystem and are controlled by alexa. I'd really like to NOT have to buy a hub or to download a new app to make this work (Lutron) but if that's the best option, I'll do it.

After a little research this AM, I'm looking at the Shelly RGBW2 or an LED specific transformer on a smart dimmer.

I'd recommend the shelly. It's solid and can be easily mounted under or inside the cabinet.

How are you getting 120 to the lights? My last house we did over cabinet and used the microwave outlet.

We're putting in a dedicated outlet for them. We've already got the Romex and low voltage wire run. Just waiting on the building inspector to give us the OK to proceed.

ooppsss i guess many outlets in my house are illegal.

We're adding 5 circuits to the panel. That's what the inspectors coming to look at.

i added a whole new subpanel to power my electric brewery an whatever else i want to add.

Put in a switched receptacle in the back of an upper cabinet. Drill a hole in the bottom of the upper cabinet to feed the lights and allow you to replace the transformer when (and it will) eventually crap out on you. As an inexpensive option, make it a $25 Kaza receptacle or dimmable switch would allow you to dim the lights at the switch or phone app.

A small 5A low voltage transformer will run any type of LED strip or puck lighting.

I would go with the cool white or daylight LED strips and not the warm white. The warm white tends to make the backsplash look yellow/dingy especially if its white tile.
