Yes. HDDs just don't keep up anymore. My work PC still has a HDD and it drives me insane now that both my home PC and my work MBP have SSDs. But I have to be tied to the domain to access some critical applications
A 128Gb can work if you store everything in a cloud, such as Google Drive, MS OneDrive, etc. Leaving your SSD for Win10 and any critical applications like Office.

Would those of you with knowledge on SSDs say that this is a good one to put in my MBP?

SSDs sure have gone down in price since I last looked them up, which was a couple of years ago. Now that they’re cheaper, I’m opting for a 1tb. I don’t know what the difference is between all of the 1tb options out there, other than price.

Is the difference in speed really worth that much more money? Also, is 128GB enough?
