iCloud/iPhone deleting contacts

I've noticed recently that my phone didn't have a number I had saved around this time last year...then another number I saved in early 2016...and then one I just saved less than 2 weeks ago! So I went back through all of my iMessages that are stored on my laptop (I could tell who the people were based off the conversations) and recreated the contacts for them... but as of today they are gone again.
I literally have no clue what is causing this. I've checked the iCloud website and the numbers aren't there either. It's like every number that I saved after a certain date is wiped from my phone after a few days.
I've switched from an 6s to 7+ to now X over the last 3 years.
Google has been no help as it just says to turn iCloud on and off and no I'm not restoring from a backup every time I plug it into my computer. Any ideas to what could be causing this strange happening?

I don’t know what’s happening, but I can’t recommend the free app MCBackup.
It backs up your contacts in about 2seconds. You tell it to send the file to your email. If you ever lose your contacts, like when getting a new phone and they don’t all transfer, just pull up the email and hit the button to restore those contacts. Bam. Done,

Thanks for the recommendation. I'll get it set up tonight.
Gotta go through my messages again and create contacts for a bunch of people I've met over the last two years.....AGAIN.
This is one of those issues where Apple wouldn't even comprehend what my issue is and I'm not really the best at explaining it.
