Using for:
word processing ( document files)
Emails
Netflix
Web surfing
Remote log in (teamviewer) to quickbooks

No gaming or video/photo editing

128 or 256

Another option is to buy external storage...but will I ever need it?

Cloud storage. Apple kills you on storage upgrades. I got the 64GB iPad pro rolling with the 200GB option and I'm fine.

Works the same. I just switched to this, I had a MacBook for years. Photos will sync automatically using iCloud Photo Storage. You'll have a file folder call iCloud Drive that works just like Dropbox.

If you’re not storing any music or pictures, 128 is fine.

Even if you are, I’d still buy the 128 and get external storage for a whole lot less than apple charges for 256.

For what it's worth - my wife's 2013 13" MacBook Air i5 with 4/128 is running the latest OS and has 30 GB of storage available. She uses cloud for photos. It still runs like it's new.

Is there a way to sync and store all of my iCloud photos to the external HD so they are never on my Mac?

There's a built in function for iCloud Photo library that automatically reduces the amount of actual pics ever stored on your computer if your HD space starts filling up. You could always do a time machine backup every once in awhile

Uses space, but not a lot.

Emails
Does not use a lot of storage unless you keep large attachments

Netflix
Uses no storage
