I've looked around but no concrete answer. Which is Apple and Verizon. Can I get everything from the genius hooked up, phone, plan, everything. Or do I need to go to an actual Verizon store?

Short answer: everything can be done at an Apple store when the stores are reopened.
Longer answer: Yes, but plan or coverage changes are better done with Verizon (Just because they do it far more often). But purchasing a phone (carrier financing, Apple payments, or outright) activating the device, data transfers and setup, and all other support can be done at the Apple store without having to make a trip to your carrier.

If you own an apple phone already the easiest way is to use the apple store app and make your purchase.
