So have I. On my visits, I saw Americans working on every line from the hooks to the final packaging.
Let's not act like these places are chock full of illegals and that's the reason chicken is cheap.
What plants did you go to and where were they?

rural TN and AL and it wasn't a processing plant (my bad

If we had a legitimate immigration policy then no one would get away with paying "slave wages."
Allowing people to come in illegally makes those people vulnerable and drives down wages.
