I just picked up a new AR and the castle nut isn't staked. Is this something I should try to do myself, or should I just let a gunsmith do it?

You can do it, it’s a pretty simple job. Tighten your castle nut to 40 pounds torqued, you’ll need a punch and a hammer. You’ll basically punch some metal into the notch on the castle nut so it cannot move. YouTube it, there should be plenty of info on it

I do, but a little confused on why I would need it. Is it to fix the coloration after punching?

Well, if you don't have the right tools you can make do, but will probably have some scratches. For me, I don't really care, especially if it's an AR.

Just paint the gun and no one will know.

Otherwise, bring it to propagandolf.

I use a spring loaded adjustable center punch. Start light and crank it up as you go. Works perfect.
