For mine, it holds temp steady until I open lid to flip the food or whatever. Once temps starts dropping, it will continue to drop until I turn it off completely, then turn back on and reset to desired temp - the it climbs right back up. I haven't done it, but they have customer service that will walk you through reprogramming or editing the settings to make it work properly. If it's close to same price, I would try a different brand (just my experience).

I will say the food comes out amazing when the unit behaves.

I have a 590. It works well and I like it. I need to start using it more, but I have been too busy lately.

I got the base model, bullseye. Pellet size is another factor in it working properly. Bullseye takes smaller pellets and from looking around, there aren't many options for smaller pellets - not that I could find locally at Academy, Walmarx etc.
