I have a room on my shop for butchering and a walk in cooler. It's taken a while to amass the stuff needed but I have a 3/4 hp grinder, band saw, slicer, tenderizer, smoker, vac sealer, etc.
I buther everything myself, and also butcher cows and pigs from the neighbors when we trade out hay. It's really not a big deal/time consuming when you do it a few times. The walk in freezer is REALLY helpful when things get busy.

For the busy working man, having lots of free freezer space or a walk-in cooler makes processing feasible when you have lots to do.

Yes it does and they aren't that hard to come by if you look long enough. I found an old refrigerated fish truck that blew the motor and bought it for scrap. Three years later the cooler is still working and it works great.
For those looking to start DIY I reccomend buying a piece of equipment each year and in 5 or so years you will have a pretty good working set up.
