I have the Weston 32 or whatever their biggest is. It’s a beast and can handle everything. I’ll process the occasional cow (lots of work!) but it’s great for deer. I’m happy with it.
Our vac sealer is equally large, Weston, not sure the model but it can handle the load with no cool down needed.

Thanks for all the suggestions. I ended up buying the Meat Your Maker 0.5hp dual-grind model. I got a 15% off coupon for it, which made it over $100 cheaper than the 1.5hp single-grind model, and used the extra money to get the 5lb stuffer and foot pedal.
