Here in Central TX- on a doe- maybe 30-40lbs if it's a big girl.
I process my self, I remove tenderloins and backstraps, grind the rest. I add a 6-8lb pork shoulder, and a 4-6lb brisket into the grind and it comes out fantastic. Adding those in gets me over 40lbs of grind usually as well.
