here is how you prevent over spillage of the oil.
DO NOT DO IN AN AREA THAT HAS A ROOF OVER YOUR HEAD
1. While turkey is in wrapper place turkey in pot.
2. Fill with water.
3. When turkey is totally covered with water remove Turkey.
4. Mark Water line with a permanent marker.
5. When time to cook and time to fill your pot with oil fill oil to about a 1/4" (Quarter of an inch) BELOW the black marker mark line. Oil will expand
6. Heat oil
7. if heated oil expands past the black marker remove excess until heated oil is at that black line.
8. Insert Turkey SLOWLY! No Overage Thank me later

Inject mine with a mixture of melted butter, garlic powder, onion powder to taste.
Fry it in Mazola corn oil. Lot better than peanut oil.

Fry it around 350degrees. Won’t burn this way. Any questions... google is your best friend.

Get it as close to room temp as you can before dunking it.

In addition to all the good advice I’d add brining. It made a subtle but positive difference in my birds
