Any recommendations for a good chartered fishing guide in that area?
And bonus if there is a spot that will prepare your catch?
TIA

Captain Jamie Hough

He can hook you up. As an added bonus, he was recently on season 10 of MasterChef.
Give him a call and tell him that I (Jared Nixon) sent u.

Jimmy Lee Armel is my go to guy down at Tybee Island (Savannah). He has a ton of fishing knowledge and has been fishing the area nearshore and the reefs on out probably most of his life (except when he was away in the military). Keep in mind that Georgia limits aren't near what Louisiana limits are and South Carolina's are even worse if I remember right.
He's never failed to get us on a good bite, even if it was kings which are fun to catch but horrible to eat. But if you email him and tell him what you're looking for he'll be up front with you if the area is delivering what you want or not.

Edited to say there's a hole in the wall type bar place at the dock that says it will cook what you catch. It's a bit sketchy looking kind of a place and I've never tried it since we usually drive home after fishing. So your results may vary with that.

Kings are good eating when done properly. Try smoking them with some fruit wood and use some wasabi when done...hard to beat. Also make great dip with some cream cheese. Also pretty good as soon as they come over the transom...again, some wasabi and a cold beer....almost anything is good when it is the fist fish on deck of a morning!
You have got to bleed kings just like almost all pelagics and most fish in general...it ain't just for Tuna. Kings fight about as good as any fish that swims and those long fast runs taint their flesh if they are gaffed and tossed on ice without bleeding them....its the same principle as big game....when an animal is scared and fighting for its life its body produces adrenaline and other chemicals for a quick performance enhancement....if they die and those chemicals are left in their system it will taint their flesh. I bleed everything. It can be messy but it makes a world of difference....

If you have fished Louisiana and Florida much you are most likely not going to be overly impressed with Georgia and the Carolinas. The fishing can be great but it is also more hit or miss than Florida and Louisiana. This is especially true of the Savannah river delta. It can be excellent but it isn't as consistent as could be....and it is a LONG way to the gulf stream....I mean a LONG way....70-80 miles...and it is relatively shallow and free of any structure so it means you gotta run 100+ miles to catch pelagics on the regular...other than of course dolphin, kings and black fin....but billfish are a LONG way offshore in the Savannah area....there is some decent but not great bottom fishing closer....and some BIg black sea bass which are very good eating.
Also some of the best tripletail fishing I have ever found...again, they ain't huge generally speaking but they are numerous. Cobia can also be good at times...Wilmington NC has one of the best cobia runs in the US and they can be caught in town on pontoon boats! Even a small jon boat is sufficient most of the time for the cape fear river and it can get loaded with cobs right in town almost

We always get our limits on Black Sea Bass which is great eating meat. You're 100% about the distance to the deep. In fact, I haven't been out to the shelf. There are like 10 different artificial reefs set up out around 5-10 miles we fish at. One is even subway cars that were sunk. They always at least get Bass and usually a good red or something else like a shark or sheepshead.
We've also used Mark Lewis at Inshore Georgia charters for inshore. He's a little South of Savannah in Richmond Hill but he's been putting people on fish all through this whole lockdown.

I went on a trip with Jason Davis - Charleston Fishing Trips out of Shem Creek, Charleston. Good captain and he put us on fish. Be prepared to be asked if you want to keep fish. They don't keep fish like we do here in Louisiana. Also, Charleston is a very cool place... reminds me a lot of NOLA.

Jamie Hough has a good reputation as well as Capt Fritz at advoutdoors dot com for Chas area. Tell Capt Fritz that deep rig 9 sent you. Inshore fishing, occasionally nearshore Reefs in certain seasons and conditions for sheeps/spades.

Tarpon fishing around Brunswick can be as good as it gets if it is good at all...nearly all summer. I don't think they catch many north of Brunswick though...
