I may eat shite for saying this but I don’t care what the angle is. Since I sharpen all my knives, I keep my angle whatever I get it at. I sharpen the same for any knife. I polish it more or less depending what the knife will be used for. I use 8” paper wheels and various grit belts on a belt grinder.
