There's a larger margin of error where the animal will still die in a recoverable distance. You miss a headshot a little and blow the animal's jaw off, it'll end up starving to death somewhere within a few weeks. It's not a smart shot to take.

You miss a pump house shot and gut shoot a deer, it runs off, you trail it for 2 days and never find it, 3 days later you see buzzards eating it..nothing etical about that
Ethical shot placement, knowing the abilities of your firearm, and confidence in your shot are what make it ethical or not, not blanket statements that shooting for the heart is better - the only reason people say this is because if they miss theres a chance to hit other vitals - don't miss...

There's a reason everyone else isn't taking headshots, and it's not because you're a better shot.
Besides, your argument for taking headshots to waste less meat leads me to believe you're a meat hunter, and therefor I cannot take you seriously anyway.
