The same way water soaks in. The key is to use a powdered seasoning, not granular

Soaking are for the ‘too dumb’ to steam/dust. Actually steaming and dusting is superior to soaking. Too many rookies overcook the crawfish turning them into rubber or soak them into mush. If that’s what you prefer, knock yourself out eating them.

It’s really apples to oranges. I like both ways fine if done right except that dusting tends to be more dry and juicy and little or no head sucking. But still a good flavor profile potentially.
