I had gas station Mexican Chilaquile with rice and beans.

A short description of it according to me, would be like Mexican lasagna... Instead of noodles they use corn tortillas and salsa. Shred chicken mix in a bunch of cheese and it's layered....
Quite tasty... And there are different recipes on the interwebs. But obviously you can spice it up or go bland. These people do it just right to my taste!
One of my daughters and I watched Blazing Saddles on Saturday evening.... Her laughter made me proud as a father.
