I bought a pack of the mystery NY strips. I marinated in low sodium soy sauce and a little smoke flavoring. I did them on the gas grill and they were absolutely wonderful.
I did have to trim a fat/gristle slab off of them before marinating. They still averaged out aboot 12-13 oz.

I think I remember that picture from the time-life book on world war II we had in my house as a kid. And for whatever reason, I remember the phrase 'Kentucky windage' or 'Tennessee windage'... Something like that.
