once it gets to about 180, i'll wrap it, put in an ice chest, and let finish cooking. i want to give at least a 2 hour rest once it's done.

I always go about 10 degrees higher than that but I know you are privy to some pro information. Mine comes out nice and juicy and pink...Giggity

I know it raises. I just don't check for temp before I stick it in the cooler. Depending on the meat it can vary in tenderness. Sometimes you can cook two pieces of meat and temp and all that jazz but 190 on two different pieces of meat are different as far as testing for tenderness.

no problem BT. i was trying to make mango sriracha, but grabbed a can of peach nectar instead of mango.
personally i thought the lemon pepper ones were the best.
i just had some of the canna-butter ones about 20 minutes ago. i'll probably throw on some Pink Floyd in a minute.

I followed a recipe and it called for peach preserves and not peach nectar. Mango sounds really good too.
