Crawfish isn't really a business lunch type of entree. It's messy, and for most people that aren't from here, an acquired taste. Hit em up with some gumbo or etouffee.

It's growing in popularity. Each time I've been to the Vegas and Hollywood Hot n Juicy they were full of people shoveling down crawfish. There was a wait to get into the Vegas one. The fact that he's expanding so fast across the nation says he's doing good business and in places you wouldn't expect it to do well.
