Charbroiled Smoker

My smoker is burning an orange flame and. “Sooting” Up the food. Any advice on fixing this is welcomed. TIA

Smoker should not have a direct flame. If temp is right and flame is not on your meat then all is good.

Sounds like too many coals and meat too close to the coals. If you are really trying to smoke the meat it should be offset from the coals, or if there isn't room, a water pan between the food and heat source.
If your setup really is designed to be a smoker, it should also have a temperature gauge.

Orange flame means it is not getting enough air. Look for insect nest in air tube

Whether it is a smoker or a grill, you shouldn't have any flames.

There is an air flange on the end of the gas line that usually has two slots in it...it needs to be open to get more air...it needs oxygen if it is yellow and smoking soot...

Clean the venturi tube with a pipe brush and compressed air. I had the same problem. Insects love propane and they build nest inside the tube
