Few things. You can get a better project Mustang with $2500. If you don’t have a shop, and take it to one to be restored, be very selective. To get the most money back out of it when you sell it again, it goes all the way down to the bolts they use. Prepare to spend 40k over 3-4 years to get it right. Get the history of the car, previous owners, where it came from. Put it all in a book with all the photos of the car you can find.

I don't think those are really worth that much restored anyway. I have a 1970 base coupe mustang with a 302 that only need's a paint job and a little rust cut out on the rear quarter panels I only paid 3k for. When I say rust cut out I mean bubbles from whenever it sat for about 20+ years in Arkansas rain. It runs and drives great and only interior problem is a cracked dash. By the research I've done, it's probably worth about 17k restored. The shelby's cobra's boss' is where the money is.
