The Tascam has RCA jacks, and so does my interface, and then the interface has a USB output to go to the computer. Can I just use that at line level, or will I need to boost the signal at all?

Which interface, but I’m going to say yes. Keep your levels low, you can always bring them up later.

It's just a Behringer low priced model, but I will just do one track at a time.

If Audacity is like Reaper, you switch the Tascam to export files while connected to the computer via usb. Audacity should have an "import files" on one of the drop down menus. You can import one track at a time to a new track in Audacity.
If not that, you export files to a folder on the computer. They'll be wav files and then import them in to Audacity from your folder.
