DJs with serious mixing boards - answer me this please

With all those dials and knobs, why do some DJs consistently turn tons of knobs maybe 3° all throughout their sets? I can understand at least a 180° shift to change the sound of a certain song, but what’s with all those little bitty tweaks consistently for 60 minutes straight?

real dj's are changing EQ's/ filters/ effects
the rest of the time its cycling through songs to mix in and then matching the beat of the track playing and then fading in the new song
