Yeah, I'm always hearing people quote lines and referring to scenes about family and Christmas.

No, this dumb meme is about degenerating Christmas. Always was, always will be. That's why it's seen as a funny thing to say. Because of all the violence and death. It's a joke. "Die Hard is a Christmas movie, har har." Why do people laugh when they say it? Because it's a joke.
