There is definitely a lot of skill and expertise going into making many of those blades. I've seen ice block chops, log chops, puncturing metal cans, wailing away on metal and wooden shields, etc.------then the sharpness test. It is a testament to the skill of the knifemaker to have a blade retain a good cutting edge after all that abuse.
