His best one was Louisiana. When he took part in the Butchering of the Pig, in La Platte I think?
I think it was in Eunice. That show was awesome. A little off-the-beaten-path stuff in N.O., then the all say "eat every part of the pig" boucherie.
best quote of the episode?
On the furless pig: "The pig is now smooth and hairless as a pole dancer's taint."
His layover show in New Orleans was great--once again, cool places that the natives frequent, not the normal run-of-the-mill tourist traps.

Not a huge expert on the show but I believe it was Mozambique where he had piri piri chicken. Don't care what you say, that stuff is legit.

My favorite might be the one where he and Zamir have the terrible time in Romania. I loved the recurring references to that episode in every other episode where he is in Eastern Europe/with Zamir/in the finale.

This goes back a ways, but my fave was when he went to Russia. The episode ends with the host taking Anthony to his mother's state concrete apartment where she makes borscht.
While AB & the host get hammered on vodka and have some east/west glasnost, the host's older brother-clearly not over the cold war, keeps a steely, untrusting gaze on Bourdain.
